Revolution Bakery is 100% gluten-free, and that simple fact makes it indispensable for a piece of every Santa Fe trip we host. The donuts and cinnamon rolls are the move, the rest of the case is excellent, and the only catch is logistics: you order online ahead of time and pick up. They sell out, sometimes by mid-morning.

If you have anyone in your group with celiac or a real gluten intolerance, this is the bakery. Not a gluten-free corner of a regular bakery — the whole operation is dedicated, which means cross-contamination isn't a worry. That distinction matters for anyone who actually has to be careful, and we've leaned on Revolution more than once for guests where the rest of the bakery scene wasn't going to work.
